I use kefir in my stroganof...This looks delicious. I use kefir in my stroganoff all the time. I love kefir and I even keep my own culture. Once you get the grains (I purchased mine from Amazon.com for about $10) you just add milk, let sit out t room temperature over night or up to 48 hours, then strain out the keir grains and repeat while enjoying your own fresh kefir. I've had my culture going for about 3 years now and with every "feeding" (milk addition) the grains multiply and you can give some to a friend. <br /><br />I don't know if you can do this with store bought kefir, but I pour a few cups of my kefir into a cloth lined mesh strainer and let it sit out for an hour or so to get a sour cream like consistency and that's what I use in my stroganoff.
