Klamath Falls and Waffles Oh My :)

 How lucky am I? My Summer Strawberry Lemon Drop was featured on Serenity Saturday #46  this past week!
Sooo, in case you were wondering, I did survive the sleepover. The kids all had fun, and this is the best picture I could get of all 6 of them...as they were making ice cream sundaes. Then, as quick as the sleepover was done, off we went again...


We are finally in Klamath Falls at the Running Y. Its gorgeous here. I opted out of the freeway route and diverted us through Bend in Central Oregon and came down Highway 97. It was a beautiful drive. And the kids did well. Bend was actually about halfway, so we stopped there and had lunch downtown at a tasty little place called Planker Sandwiches. We happened to be there during Saturday market, so we explored that, and found a cute little old fashioned candy shop.

The kids are all to excited to be here. I couldn't get them to fall asleep until 10:15 last night, and they were up at 5:30 this morning! 5:30! We were at the playground by 7:30, then off for a morning stroll by the golf course. Do I look just a little sleepy to you?!


We had fun hanging out at the resort, playing in the pool and walking along the trails today. Tomorrow we are traveling out to Crater Lake. I've lived in Oregon my whole life and this will be the first time I've seen Crater Lake.

Completely unrelated but just as good {or even better} are these Waffles. No, the waffles are nothing special, I just used a mix and whipped them up. Whats special here is the homemade whipped cream and fresh strawberries, adorned with slivered almonds, layered to perfection. If you've never made homemade whipped cream, you should try it some time. My kids thought a miracle had happened or somthing. Its super easy. Just pour some whipping cream into a bowl, and beat with a mixer until it thickens {such as soft peaks forming}...it takes about ten minutes. Just as it thickens, pour a little bit of vanilla to taste...along with powdered sugar. It doesn't take much. I like to make it just slightly sweetened.
As for the strawberries, same thing. Sweeten to taste. Clean and cut all of the berries, then place in a bowl and sprinkle with granulated sugar. Let them sit for a while and they will get juicy.
All I can say is MMMM.

  1. I really enjoyed this post, but surprised that you found time to do it! Tell Anika that she shot a perfect picture of herself, and tell Russ I'm jealous having all your homemade goodies! I'm so glad you are having fun, let me know how you liked Crater Lake! It is so beautiful there. One of the things I liked about K Falls is all the Aspen trees. Hope you get to see the lake, too, and all the Pelicans!
