It's been raining here the past couple of days, big time. I've been swearing that I'm going to start making some meals that I can freeze for busy soccer nights, and I've finally started. Last night I dusted off my crock pot and made this incredibly simple ham and beans recipe. It made a big batch so we froze some for another meal. Whenever possible I try and double our dinners to do this so I can get ahead...and be able to take some nights off from kitchen duty. :)
Tonight I'm working on Potato soup...if it all turns out I plan to share soon!
Simple Ham and Beans
Ingredients:
1 28 oz can baked beans ( I used a maple bacon flavor)
1 15 oz can kidney beans
1 15 oz can black beans
1 15 oz can garbanzo beans
1 15 oz can fire roasted diced tomatoes
1/4 cup light brown sugar
4 cups diced ham
1 cup minced onions
2 cups sliced carrots
Drain kidney, black, and garbanzo beans. Add all ingredients into crock pot and place on 6 hour setting. Enjoy!!

This rain the past 24 hours has been a little crazy, eh? Perfect weather for this dish though -- and can't wait to hear if the potato soup turns out! I love potato soup.
ReplyDeleteYes it has! The sun can't get here soon enough! The potato soup turned out great...we actually had it for dinner tonight, and my kids only complained a little bit about "soup" two nights in a row...even though I tried to explain that the ham and beans wasn't soup ;)
DeleteSoup with a little garlic cheese bread sounds so comforting now- especially after an evening that I kept waking up for all the wind and hard rain! I love the idea of just cooking a big batch, one for now and one for a busy evening later- I just wish my freezer was big enough to accommodate that!
