The other day we kind of had an impromptu family day together and ended up going to the movies, doing a little shopping, and ended the day with a BBQ on the back deck. At Walmart I ended up buying something that I don't buy very often - Kool Aid. They have new 96 oz. bottles and even though I grew up living on the classic drink, we don't have it in our house very often, so for my family it's definitely a summer treat.
While we were hanging outside the topic of our end of summer celebrations came up. Normally in August we have two large events - I have an End of Summer Celebration and Anika has a birthday party. Since one of my best friends is getting married at the end of August, I'm not sure if I'll have the time (or energy!) to host my party this year. The thought of not doing it makes me sad, but this summer is going so quickly already this year, I'm not sure I could squeeze it in everyone's schedules either.
I do know though that we will have a party for Miss Anika though, I'm just not sure what to do yet - and her birthday is on the 12th!! We've talked about doing things we've done in the past, like a backyard sleepover or even a hotel stay (like we did last year), but in any case to make a long story short, the two of us began brain storming on what food she'd like to have along with all of the treats and goodies (that are a must when you want to celebrate), and then a light bulb went off in my head.

It sounded like something easy to make that we could customize to make whatever flavors we wanted - so I gave it a try and they turned out perfect! We tried pink lemonade first but our favorite was orange cream.
Orange Cream Rice Cereal Treats
6 cups of rice cereal
3 tablespoons of butter
1 teaspoon of vanilla extract
1 package of orange flavored Kool Aid (unsweetened packet)
10 ounces of marshmallows
1. Grease 8" x 8" pan and set aside.
2. Warm butter in a large pot on medium heat until melted, then add marshmallows and stir until they are melted as well. Pour in vanilla and Kool Aid packet and mix well.
3. Take pan off of heat and mix rice cereal in. Pour mixture into the pan then spray your hand with butter spray (so it won't get sticky) and then press the mixture into the pan with your hand.
4. Place pan in the refrigerator until cool, then cut and enjoy!
Depending on Anika's birthday theme and colors, I can see us getting even more creative and cutting the treats with cookie cutters into shapes to match - perhaps even making them favors for her friends. Who knows? The possibilities are endless.... now to plan the party! :)
