I am always looking for a quick and easy chicken dinner ideas for make for my family. My kids absolutely love chicken enchiladas, and I like making them because they are fairly easy to make and consume a lot of my time. I am big on making homemade dinners as much as possible, so when we began putting the kids in sports which took up a lot of our precious time together in the evenings, I had to improvise and find ways to create the same quality meals in less time - and so I found and fell in love with the Tyson Grilled and Ready line. I use their Grilled and Ready Chicken when I'm crunched for time and it seriously cuts my preparation time down in half, plus they use all white meat chick and there are no preservatives or added hormones or steroids, so I don't have to worry about what I'm feeding my family.
One of my friends recently moved and knowing how much work is involved with packing and unpacking, I decided to make a double batch of my chicken enchiladas last week and bring her dinner. I've learned that sometimes it's the little things that we can do to help our friends and let them know that we are thinking of them that means the most. One thing I love about Tyson products is that they have the same beliefs that I do.
They've huge on giving back through their Tyson KNOW hunger program and have partnered up with Walmart and Champions for Kids and created the #SummerOfGiving campaign to help provide 5 million meals for kids this summer. Dinners and snacks are something that a lot of us take for granted, but there are so many kids out there that wonder when their next meal will be, or don't get enough of the right nourishment that their bodies need to grow. It breaks my heart. So from now until July 9th, for every bag you buy of specialty marked Tyson packages at Walmart, they will donate 1 meal to a child in need.
A simple easy meal for my family, my friend's, and I get to help be part of this amazing campaign? Let's just say I'm stocking up on a few extra Tyson frozen products this month. ;)

Easy Chicken Enchiladas
Ingredients:
1 22oz bag of Tyson Grilled and Ready Chicken (found in the frozen chicken section at Walmart)
2 19oz cans of your favorite brand of enchilada sauce
16 8" flour tortillas
1 can of olives, sliced
6 cups of cheese, shredded ( I used cheddar and sharp white cheddar for ours)
2 Tbsp sliced green onions
Preheat oven to 350 degrees
1. Warm chicken over medium heat until completely thawed.
2. Add one can (19oz) of enchilada sauce to the chicken, and 3 cups of shredded cheese, and 1 cup of olives. Stir until cheese is melted and everything is blended.
3. Pour 1/2 cup of mixture in a flour tortilla and then roll up and place in a deep dish baking pan. Continue until you have made 8 enchiladas, then repeat and make 8 more in a second pan.
4. Open second can of enchilada sauce and pour 1 cup over each dish of enchiladas, then sprinkle 1 1/2 cups of cheese on each batch of them. Top with green onions and olives and place into oven for approximately 15 minutes or until cheese is melted. (I like to place mine under the broiler for a minute after it's finished cooking to crisp the cheese a bit).
Serve with salsa and sour cream and share the send dish with someone you love!

ReplyDeleteI love making enchiladas but all that rolling is too time consuming and messy for me these days. Instead I make it like a casserole or lasagna, layering tortillas. It tastes just as good and requires so much less prep!

Mmm, looks delicious! I have a very similar enchilada recipe that I use frequently. It freezes very well, which makes things a snap when I have to plan a quick dinner or take food to someone.
