Liebster Awards & Pizza Stations!

Holy Moly its been quite the week around here! I unfortunately got a sore throat after our little vacation {which I don't know why they call it a vacation if children are involved....not restful! But it was a nice change} and ended up loosing most of my voice. The kids love it, because I try and yell and them to do something and all that comes out is a little scratchy squeaky sound.
So, I am a lucky lady! Terrie from Hearth and Whimsy nominated me for a Liebster blog award! Terrie told us that "liebster" means "dearest" in German, and its meant for  blogs with less than 200 followers - as a way of encouraging them! <3

Next on my blog 'agenda' for the day :) is this.... I finally created a 'button' for my blog! I kinda like it ;)...I'm sure there will be more as I progress, but for now, this is it. The code is on the side bar, if you are interested in button swapping let me know! I'd love to :)



Now for the creative part in my post! So, as you guys know I had another fun {exhausting} sleepover a couple weeks ago, and I'm always trying to think of fun ways to cut corners. So I decided to let them make their own dinner. English muffin pizzas. That way they couldn't complain that they didn't like something! {There is always one in every crowd} I went ahead and covered the dining room table with brown paper. I lucked out a couple years ago and bought a bunch of rolls for like .89 each! Comes in handy. So then I set out all of the toppings and let them have at it!





Then when they were done I just put them in the oven at 350 for about 15 minutes.

Italy, my love. {Goals & Dreams}

  If you know me at all, you know I have many dreams. One of those dreams includes traveling to Italy. I'm not quite sure when it was that I decided I was going to fall in love with Italy, but it was a long time ago. For nearly ten years now I have dreamed of seeing the architecture in Rome, the artwork throughout the regions; there is so many things to see I know my visit will have to be two weeks. Even then there will be so much I won't be able to do.
Italy, my love.
I will travel to throughout Tuscany and sample wines from vines planted generations ago.
I will sit at an authentic cafe' and have a latte' or espresso, or whatever it is they make good there, and just people watch.
I will stuff myself with gelato.
I will visit the Sistine Chapel, Colosseum, Pisa (and its leaning tower)
I will visit the lost city of Pompeii.
And wouldn't it be so grand to take a cooking class and make my own Italian feast, in Italy?
Oh the food, I love Italian cuisine so much. And all of the regions have different 'flares'. Dinner isn't rushed so much as it is in America. A pizza is usually ordered as an evening snack, and the real meal won't start until later in the evening, and can go on and on into the night.
I would love to ride a bicycle through the countryside.
And fly in a hot air balloon over the rolling hills.
I would sit there in awe looking at the beaches, and beauty of it all.
Oh the history of this place I dream to go.
And I haven't even mentioned anything about Venice or Sicily yet.
Sigh, like I said, two weeks won't be enough, I will have to limit my travels, this time.
It is my goal to visit Italy and have my dream vacation when I am 30. That's three years away. Not that far off for the lavish time I plan on having. You see, when I go, I plan to go all out. This will be the trip of a life time.
Oh yes, the shopping. I nearly forgot about Gucci, and Prada! Not that I will buy much from them, but I am most definitely buying myself little pieces of Italy to bring home.
So my friends, it is time for me to crack down on our finances and spending, get all of the bills paid off, and start saving for my dream.
I might need a little encouragement along the way. :)
But this is my dream.
And we all need to follow our own.

31 Fun Kid Activities to do in the Summer!

I can't believe summer is moving so quickly this year! 4th of July came and before you know it we will be well into July. I don't know about you, but my kids are always pestering me to go do something. They are always on the go. So I have compiled a list of 31 fun, inexpensive activities you can do in the summer to keep them occupied, as well as keep you sane. :)

1. Take them to the park. - This is a no brainer! The park is free fun. Check out 5 reasons why you should be taking your kids to the park here.

2. Ice cream anyone? - Kids love ice cream, and you know you do to. ;) Bribe them with a trip to your local DQ on a hot afternoon...better yet, take them to a local ice cream shop and support a small business!

3. Take them to the library. - Seriously, I don't know about your kids, but mine love looking at new books, and recently got themselves library cards {that they are very proud of}. Even if your kid isn't an avid reader, take them anyways, and encourage reading!

4. Pick Berries. - I absolutely love taking the kids to a local farm and spend the afternoon picking berries. Blueberries are my favorite to pick with the kids because they are easy, and  have no sharp thorns. We always treat ourselves to a smoothie at the farmer's stand when we are done!

5. Have a craft day. - Spend some time online looking through blogs for some fun crafts to make with the kids. Channel your inner child and participate as well...you'll be surprised how happy it makes you feel!  Here's a simple, fun craft to get you started.

6. Go camping...in the back yard. - Seriously, my kids freak out when we set the tent up in our yard! And its so much easier than really going camping. ;) Go all out and roast hot dogs and make smores, and sing a song or two around the BBQ!

7. Pack a picnic. - Have you kids help with the food preparation, and go on an adventure walk to find the perfect spot for your picnic. Don't forget the camera and sunscreen!

8. Slumber Party!!! - I know, I know, slumber parties are still a source of anxiety for me as well...but do it anyways. Sure your house will be completely thrashed when its over, but you will be the coolest mom around ;) Check out some Girl's Slumber Party Ideas here.

9. Take a trip to the beach. - If you don't live close, take them to the lake, river, pool, ...somewhere where there is water, and let them play, and explore for the afternoon.

10. Check out a National Park. - we've been to a couple recently. These parks are usually day trips, and there is lots of wildlife and outdoor adventures to be had. You can check out our recent trip to Crater Lake. Some of these parks charge a small fee to get in, usually like $10...pack a lunch and you've got a cheap day of fun!

11. Bubbles! - My kids {heart} bubbles! Seriously, totally cheap, entertainment. You COULD just go buy some, or you could get extra creative and just make your own. Its super easy, and here is a set of good instructions from Hellobee.

12. Pretty Pedi's! - Okay, so this is one for the girls, but oh-so-much fun! Here's a few designs to ponder on...

13. Friday Night Movie Night - Let them pick out a movie, cuddle in their sleeping bags, stay up late eat lots of popcorn!

14. Explore a Saturday Market - Its prime season right now, and there are lots of tasty treats and homemade items to check out!

15. Chalk it up. - Go grab a box of the brightest chalk you can find and create a chalk village together on the sidewalk or driveway!

16. Take them Bowling. - This is a great one for an especially hot day. I know many local bowling alleys have cheap and even free kids bowling hours during the summer!

17. Make Pizza Rolls! - Simple and fun, and the kids will feel so proud that they made dinner!  Here's  a recipe I threw together, but get creative and make your own!

18. Go Rock Hunting. - My kids love to collect rocks. No joke. I find them on my living room carpet, in their booster seats, their pockets. Well, if you can't beat 'em; join 'em. Go rock hunting, find the most interesting rocks you can, and then take them home and let the kids paint them. They can make little animals, bugs, food, whatever they think that rock should be :) Then at least you have a colorful rock collection!

19. On with the show! - Hang a sheet from somewhere as a backdrop, and let them get creative and put on a talent show. My kids love to do this, then wait until their dad gets home to perform in front of us - and of course record their spectacular performance so you can watch it again, and again. ;)

20. Have a backwards day. - Let them put their clothes on backwards, and eat dessert for breakfast, then dinner. Have breakfast for dinner that night...do things that you normally do in opposite order! They'll love it!

21. Have a "Coffee" date. - my kiddos love their coffee {you know, the steamer type :) } so every now and then I take them down for coffee time. Sometimes I do it individually, other times all together. Sometimes we walk. It definitely makes them feel big like mommy.

22. Go to a Children's Museum. - This is on my to-do list still for this summer. There's a couple great ones fairly close to me. Always make sure you check out the website online, because some of them have certain days of the month with reduced, or free admission!

23. Board Games and Floats. - Break out the family games, and have game night. Get some vanilla ice cream { if you are feeling extra "wonder-woman'y" make some! }, and buy some root beer and orange soda and have a good ol time!

24. Visit a county fair. - Tips to keep costs down: Go on family day, pack lots and lots of snacks and drinks,and make sure you let everyone know ahead of time how many rides they can have, as well as how many goodies you will buy! Check out all of the 4H animals and make it a learning experience too!

25.  Have a Tea Party. - This can be something that you do with just your children {and their stuffed friends} OR you could let them make invitations for a couple of their friends and have a play date one afternoon.

26. Have a "Travel the World" week! - I still have to try this one. Pick 5 places that you and your kids are interested about. Use the WWW and the library to learn some cool stuff about there, print some pictures, and make a 'travel' scrap book. Find authentic recipes to make, and create a themed dinner every night for those 5 days! Use your imagination....it will be fun to look back through the scrapbook, and you will all learn a thing or two. :)
P.S. You know Italy will be on the top of my list!

27. Go ride a bike! - Family bike ride, need I say more? It's a must for summer!

28. Make some Fun PB&J Kabobs! -Here's my kids' and their reactions the first time I made them!

29. Sit Down together, and make a Fall Bucket List - There is SO many fun fall activities as well, back to school, pumpkin patches, Halloween, hay rides, October fest festivals, ... do some research on what's going on around you, and then plan for the next season of fun!

30. Take pictures from all of your summer activities! - Make a scrap book together! It doesn't have to be anything fancy, but let them decorate it up, and write about their summer adventures. It will be something you will cherish forever. Promise.

31. Stop and smell the flowers. - I don't know about you, but we always seem to be rushing from one place to another, in a hurry. The other day I was telling my four year old to hurry up, and I turned around and saw her standing there, just smelling all of the flowers. We need to remember to slow down, enjoy the little things and cherish the chaos that comes along with having children!

Crater Lake/Vacation Adventures!

All I have to say is WOW! First of all, my Summer Strawberry Lemon Drop is turning into quite the popular feature! Christine from First Home Love Life has been oh-so fabulous and featured it on her What's Cooking Wednesday! Thanks!!!

Crater Lake was uh-mazing. So beautiful, the water so so blue. Its the deepest lake in the United States and yup, its right here in Oregon. We lucked out and the kids got to play in snow, on a gorgeous 60 degree sunny day...and in July! They were so excited to tell their friends about that! Just look at these pictures....so pretty, and these were just from my little no-frills camera, and no colors altered or photoshop at all! Seriously, its this bright. Definitely worth the drive to see. We packed a lunch and spent the afternoon dinking around up there. There is a road that you can drive all the way around the lake, but the east side was still blocked off due to snow, so we went about halfway around the lake and then came back.

Today we hung out around here because the next two days are filled with fun! Today of course is the 4th of July, and we will be heading into Klamath Falls for their parade and fireworks show this evening. Then Thursday if all goes well we will pop over to the Lava Beds National Monument across the border in California.

Nothing better than a frappacino on our nature walk on a beautiful 80 degree day.

My daughter that never slows down. She wanted something to do...so I took her on a walk around the entire resort and golf course. It took nearly 1:45 minutes!

Klamath Falls and Waffles Oh My :)

 How lucky am I? My Summer Strawberry Lemon Drop was featured on Serenity Saturday #46  this past week!
Sooo, in case you were wondering, I did survive the sleepover. The kids all had fun, and this is the best picture I could get of all 6 of them...as they were making ice cream sundaes. Then, as quick as the sleepover was done, off we went again...


We are finally in Klamath Falls at the Running Y. Its gorgeous here. I opted out of the freeway route and diverted us through Bend in Central Oregon and came down Highway 97. It was a beautiful drive. And the kids did well. Bend was actually about halfway, so we stopped there and had lunch downtown at a tasty little place called Planker Sandwiches. We happened to be there during Saturday market, so we explored that, and found a cute little old fashioned candy shop.

The kids are all to excited to be here. I couldn't get them to fall asleep until 10:15 last night, and they were up at 5:30 this morning! 5:30! We were at the playground by 7:30, then off for a morning stroll by the golf course. Do I look just a little sleepy to you?!


We had fun hanging out at the resort, playing in the pool and walking along the trails today. Tomorrow we are traveling out to Crater Lake. I've lived in Oregon my whole life and this will be the first time I've seen Crater Lake.

Completely unrelated but just as good {or even better} are these Waffles. No, the waffles are nothing special, I just used a mix and whipped them up. Whats special here is the homemade whipped cream and fresh strawberries, adorned with slivered almonds, layered to perfection. If you've never made homemade whipped cream, you should try it some time. My kids thought a miracle had happened or somthing. Its super easy. Just pour some whipping cream into a bowl, and beat with a mixer until it thickens {such as soft peaks forming}...it takes about ten minutes. Just as it thickens, pour a little bit of vanilla to taste...along with powdered sugar. It doesn't take much. I like to make it just slightly sweetened.
As for the strawberries, same thing. Sweeten to taste. Clean and cut all of the berries, then place in a bowl and sprinkle with granulated sugar. Let them sit for a while and they will get juicy.
All I can say is MMMM.
